Aujourd\u2019hui, les tendances de consommation \u00e9voluent pour se tourner de plus en plus vers une <strong>alimentation plus saine<\/strong> pour notre sant\u00e9. Les nitrites sont \u00e9galement <strong>naturellement pr\u00e9sents<\/strong> dans la nature, autant dans le sol que dans l\u2019eau, c\u2019est pourquoi on les retrouve aussi dans<strong> les l\u00e9gumes<\/strong> tels que les \u00e9pinards, les haricots verts, la laitue et bien d\u2019autres l\u00e9gumes provenant du sol. <strong>41%<\/strong> des nitrites proviennent <strong>des fruits et l\u00e9gumes<\/strong> et <strong>39% de la viande animale.<\/strong><\/p>\n<p>Depuis de nombreuses ann\u00e9es, les nitrites jouent un r\u00f4le essentiel dans la <strong>fabrication de charcuteries<\/strong>. Une dose qui est tr\u00e8s loin d\u2019\u00eatre atteinte par<strong> les charcuteries fran\u00e7aises traditionnelles<\/strong> puisque les recettes ne n\u00e9cessitent pas une telle quantit\u00e9 lors de la pr\u00e9paration. C\u2019est d\u2019ailleurs pour cette raison que <strong>les charcuteries fran\u00e7aises<\/strong> se sont engag\u00e9es dans <strong>le Code des usages de la charcuterie<\/strong> pour limiter l\u2019utilisation des nitrites.<\/p>\n<p><strong>Les entreprises de charcuterie fran\u00e7aises<\/strong> ont ainsi volontairement r\u00e9duit <strong>les quantit\u00e9s de nitrites<\/strong> utilis\u00e9es en France de 40% par rapport \u00e0 celles impos\u00e9es par la r\u00e9glementation europ\u00e9enne, pla\u00e7ant ainsi la France parmi les pays du monde ayant le plus <strong>r\u00e9duit l\u2019usage des nitrites dans les charcuteries.<\/strong><\/p>\n<p>De plus, <strong>l\u2019utilisation des nitrites<\/strong> est tr\u00e8s<strong> r\u00e9glement\u00e9e et suivie<\/strong> par des organismes des pouvoirs publics comme <strong>l\u2019OMS<\/strong> (Organisation Mondiale de Sant\u00e9) qui assure un contr\u00f4le r\u00e9gulier gr\u00e2ce \u00e0 de nombreuses \u00e9tudes men\u00e9es en partenariat avec <strong>l\u2019ANSES<\/strong> (Agence Nationale de s\u00e9curit\u00e9 sanitaire de l\u2019alimentation, de l\u2019environnement et du travail). Il s\u2019agit de cagettes ap\u00e9ritives en 260g \u00e9labor\u00e9es selon <strong>3 recettes<\/strong> : p\u00e2t\u00e9 de campagne nature, p\u00e2t\u00e9 de campagne \u00e0 l\u2019ail et terrine au thym de Provence.<br \/>Parmi notre gamme de <strong>jambons \u00e0 l\u2019ancienne<\/strong>, nous comptons \u00e9galement <strong>deux jambons sans nitrite<\/strong>. Ils sont fabriqu\u00e9s selon le m\u00eame process que nos autres jambons \u00e0 l\u2019ancienne, mais le salage \u00e0 la veine est effectu\u00e9 \u00e0 partir d\u2019une <strong>saumure sans nitrite.<\/strong> Ces<strong> jambons blancs<\/strong> ont donc la particularit\u00e9 de ne contenir <strong>aucun nitrite<\/strong> du d\u00e9but jusqu\u2019\u00e0 la fin du <strong>processus de production<\/strong>.
